Slow Cooker Recipe - Duck In A Red Wine Sauce


Ingredients

1 leeks
3 carrots, sliced
1 sticks celery
salt and freshly ground black pepper
4 slices bacon
2 tbsp plain flour
4 whole duck or chicken legs
few sprigs fresh thyme, or 1 tsp dried
2 chopped garlic cloves
1 tbsp tomato ketchup
400ml/½pt red wine
100ml/3½fl oz chicken stock
150g/5½oz button mushrooms, cut in half

Method

Put the leek, carrots and celery into a slow cooker, and season with salt and pepper.
Fry the bacon until crispy add to slow cooker.
Coat the chicken in flour and add salt and pepper.
Fry the chicken in some oil until browned.

Put the chicken on top of the vegetables in the slow cooker and add thyme.
Add a little more oil to the frying pan if needed, then add the garlic.
Cook for a minute, then add the wine and ketchup and bring to the boil.
Add the stock, return to the boil, season with salt and pepper, then pour over the meat and vegetables.
Cover with the lid then cook on low for six hours, until the duck is tender.



Serve with roast potatoes, green beans and broccoli. Enjoy!

  1. Wow this looks sooo good, I wonder if I can make a vegetarian version - nice challenge. I love how all the wine and juices mix together - slow cooking is the best :)

  3. I love slow cooker dishes - just set them off the night before, or in the morning, and dinner's there ready and waiting when tummies are rumbling. Could this be made without the wine for those who can't tolerate alcohol? I know it's Coq au Vin - so without the Vin it would just be....well, erm... I wonder if there would be another way to emulate the richness it adds? Great recipe though, thank you

    1. If you didn't want to use wine I would use chopped tomatoes or why not try alcohol free wine?

  6. I've been looking to buy a slow cooker. I'm not a massive fan of duck, but that could be due to the fact I've never cooked it myself. Great recipe.
