Crispy Lemon Cake

Sometimes you just feel like baking a cake!

Here is my recipe for Crispy Lemon Cake

Ingredients
4oz (100gms) soft margarine ( I use Flora buttery)
6oz (150 gms) caster sugar
2 medium eggs lighten beaten
6oz (150 gms) self-raising flour
zest of 1 lemon, finely grated
1 level tsp of baking powder (but you can leave this out)
2 tablespoons of milk

Topping
4 oz of granulated or caster sugar
Juice from 1 lemon

A loaf tin -  lined with buttered greaseproof paper 

Method
1) Put the oven on at 180 degrees C.

2) Beat the butter and sugar together until soft. 

3) Add the lightly beaten egg a little at a time. If the mixture starts to curdle add a little of the flour. 

4) Once all the egg is mixed in, fold the self-raising flour, lemon zest and baking powder into the mixture. 

5) If the mixture looks a little stiff add 1 or 2 tablespoons of milk until it is a soft dropping consistency.

6) Spoon the mixture into a loaf tin and level out. 

7) Bake for 40 minutes until the cake looks golden and it springs back when touched lightly in the middle.

8) While it is cooling, juice the lemon and mix with the 4oz of sugar. If you prefer a crunchier texture use granulated sugar. 

9) If you have a skewer prick the top of the cake a few times (this is optional but will help the sugar mixture penetrate the cake) Pour the sugar mixture over the cake and leave until cold.  


Eat and enjoy!

Choosing The Perfect Wedding Cake

When it comes to your wedding, you want to make sure everything is perfect. From the venue to the clothes that you are wearing, to the people involved in your wedding party - everything has to be just right. The same goes for your wedding cake - it is such a massive part of your big day that it needs to be exactly how you want it, but how do you choose the perfect wedding cake when there is so much choice out there?

Choosing the right people to make it, is always something that should be considered first - perhaps choose a local company that has excellent feedback like the Perfect Pudding Company who make amazing wedding cakes in Essex and you know will deliver upon what you want. But once you have chosen the right people to make your wedding cake, then you need to decide exactly what you want. So how can you do this?

Think About Your Wedding Theme




Are you going for a traditional theme? If so, perhaps the traditional fruit cake option is the one for you. If your theme is tea party-esque, perhaps some cupcakes in a tower would be the perfect cake option for you. If you are keeping to a theme then it makes sense to keep the cake according to the theme also. If you are having a non-traditional wedding then let your imagination go wild!

Think About Flavours


Something that you really need to consider is the flavours that you both like. If neither of you likes a traditional iced fruit wedding cake then there is no point having one of those if neither of you will enjoy it - it is your wedding day after all. You may choose to go for chocolate or a vanilla sponge, red velvet, lemon or perhaps a carrot cake to be a little different. You could even go completely obscure and have a cheese tower cake instead - a savoury delight.

Size Matters



When thinking about your cake, it is important to remember that the size of it matters - after all, you will be wanting each guest to sample some for themselves. Whilst a wedding cake with a few tiers may go round a few hundred guests, a cupcake tower may be better suited to a wedding with a smaller amount of guests so everyone can enjoy the cakes.

Do what you want


At the end of the day, your wedding is about you and your partner. It is so important to remember this and to choose what you want and not what other people think you should have.

It is okay to take advice but don't be afraid to go with your gut instinct and your preferences. Whether you want a many-tiered fruit cake or a one-tiered chocolate cake, whether you want cupcakes or a cheese tower, whether you want something completely obscure or want to keep to traditions, it is all about what you as a couple want. As long as you are both happy, then that is always going to be the perfect wedding cake for you.

Bakerdays Christmas Cake Review And Giveaway Ends 22/10

I have always thought of cake as being one of my five a day, so when bakerdays got in touch to ask me if I would like to review one of their Christmas cakes, of course, I said yes.

bakerdays is a company that delivers celebration and gift cakes all over the UK. From birthdays to anniversaries, Easter to Halloween, the cakes are suitable for any occasion. If you are looking for gluten and wheat free cakes or dairy free cakes they make these too so that is good to know if you have someone who has an allergy or intolerance.

The cake they sent me was a letterbox Christmas cake. Now letterbox cakes are a genius idea, not home to receive one? It doesn't matter as they fit through the letterbox. See what I mean about genius!




So I looked on the website and went through the designs to order my cake. Now some people are traditionalists and love a good fruitcake for Christmas, whilst others prefer a traditional sponge cake, a lemon cake or even a chocolate cake under their Christmas icing. The good thing about ordering your cake from bakerdays is that you can choose a variety of different sponges and you don't have to order a fruitcake for your Christmas cake. 

The choices of designs are wide, from fun cartoon characters to romantic designs, and traditional Christmas scenes, there is a design for most people. I picked a design I thought my son would like as he loves dogs, a cake called 'dachshund through the snow'. 

A few days later the cake came through the letterbox and landed on our doormat. With excitement, I opened the box, looking forward to seeing the cake. The cake was delivered in a sturdy little tin and came complete with card and a cracker, what a nice touch! 






The design was true to the photo on the website and I thought it looked really good.





The sponge was light in texture and tasted great. The icing was soft and sweet, exactly as expected. I have to admit I was expecting more buttercream though, as there was a very thin amount on the bottom of the cake. The letterbox cakes are described as serving 3-4 and are priced at £14.99. Personally I think it is a little expensive for what you get but of course, you pay for the convenience, the tin and the design which you can personalise. Overall it is a lovely cake that anyone would appreciate having for Christmas.

Banana Chocolate Cake And The Blooming Great Tea Party

Most of us know someone who has had cancer, and thankfully many people who have cancer go on to live until old age these days. Unfortunately, some don't. Marie Curie, the charity offers support and care for those with cancer but did you know they offer care for any terminal illness too? 

This year on the 23rd to 25th of June they are encouraging family and friends to hold a fundraising 'Blooming Great Tea Party'. It's easy, fun and a great thing to do. All you have to do is pick a date, invite some friends, bake some cakes and watch the donations roll in.

Will you make a classic Victoria sandwich or a red velvet cake, or what about my chocolate and Caramac roulade or my classic Bakewell tart.

For some inspiration check out the recipes on the Marie Curie website by award-winning food blogger Suzy Pelta. I tried out the banana and chocolate cake with a peanut butter frosting below and found it was so easy to make. You can even use some great food processors for making your own nut butter to add in if you are dairy-free.

Banana and chocolate cake with peanut butter frosting




Ingredients for the cake

3 medium bananas
120g butter
100g dark chocolate
2 large eggs
160g light brown sugar
Pinch of salt
150g self-raising flour plus 1 tablespoon extra


Ingredients for the icing

150g smooth peanut butter
225g cream cheese
1 teaspoon of vanilla extract
300g icing sugar (sifted)
A few drops of whole milk
Flake bars to decorate



Method

  1. Preheat the oven to 180°
  2. Grease a 20cm deep round tin and dust with flour
  3. Mash the bananas in a mixing bowl and add one tablespoon of flour
  4. Melt the butter in a saucepan
  5. Add the chocolate and take off the heat. Stir until melted
  6. Add the warm mixture to the bananas and combine
  7. Beat the eggs and add to the bowl along with sugar and salt, and mix
  8. Add the flour a third at a time. Stop stirring as soon as the mixture comes together
  9. Pour the mixture into your tin and bake for 45 - 55 mins (depending on your oven)
  10. Remove from oven and allow to cool
Don't worry if the cake cracks as your icing will hide it.
Method for icing

  1. Once the cake is cooled, you can add the icing. You can also make the icing in advance and store in the fridge until needed.
  2. Mix the peanut butter, cream cheese, vanilla and half of the icing sugar - ensure you stir by hand
  3. Once mixed, add the remaining icing sugar a third at a time, along with a drop of whole milk
  4. Add more peanut butter to taste
  5. Mix until the icing sticks to the spoon but could be easily spread.
  6. Using a palette knife, spread the icing across your cake. Decorate with crushed Flakes.
Now I must admit, the frosting was very soft when I made it and there was a lot of it, so if I made it again I would chill the mixture for a good 8 hours and make a third less of it. 

What I liked about this cake is that it is moist and sweet but surprising not too rich.

Chocoholic Cupcakes With Dr. Oetker

When I was invited to try out some Dr Oetker baking products I thought, yes please! I first came across the brand through my love of pizza, and then I found out that they make a range of items for bakers everywhere. From cooking chocolate to frostings, icings to marzipan and edible decorations too, they have everything the home cook needs to take their bakes from the "yummy" to the "SCRUMMY".

So I decided to make the chocoholic cupcakes and to involve my teenage son in the making of them ( and eating) as I am trying to teach him some life skills before he ventures off to university in September, and of course, everyone should know how to make cupcakes! We decided to decorate them in lots of different ways to the recipe on the website, using a selection of Dr Oetker decorations.


These cupcakes were easy to make and looked impressive. My 18-year-old son had no problems making them at all, although I did help him by sieving the flour into the mixture whilst he creamed the butter and sugar together and added the eggs. The recipe states it makes 12 but we made 10 nice size cupcakes.  

So how did they taste? Totally delicious! Myself, my son and my husband polished them off in no time.

If we were going to make them again, I think we would pipe the chocolate buttercream on top into swirls to make them look even better.

Chocoholic Cupcakes Recipe

Ingredients

Sponge cakes


110 g Butter or Margarine (4 oz)
110 g Caster Sugar (4 oz)
Medium Eggs x 2
60 g Self-Raising Flour (3 oz) Sieved
15 g Cocoa Powder
2 ml Dr Oetker Madagascan Vanilla Extract (2-3 drops)
Dr Oetker Cupcake Cases


Icing

75 g Butter Softened
175 g Icing Sugar
45 g Cocoa Powder (3 tbsp)

50 g Dr Oetker Fine Cooks' Milk Chocolate

Method

Pre-heat the oven to 180°C/350°F/Gas Mark 4. Place the Baking Cases into a cupcake tin.

Cream together the butter and sugar until light and fluffy. Gradually beat in the eggs and the Natural Vanilla Extract. If the mixture starts to curdle, add a little flour. Fold in the remaining flour and cocoa powder with a spoon

Place spoonfuls of the mixture into the baking cases and bake for 15-20 minutes until well risen and firm to the touch.

Remove from the oven and leave to cool on a cooling rack.




Ensure you sieve the flour and cocoa powder for best results

To make the chocolate icing, place the softened butter into a bowl. Sieve in the icing sugar and whisk until smooth. Add the cocoa powder to the butter and sugar and stir until smooth. Spread the icing over the cupcakes and leave to set.

To decorate, break the chocolate into pieces in a dish and pop in the microwave on high for 30 seconds, give it a stir and then cook on high again for 30 seconds or until melted.  You can also do this is a bowl over a pan of hot water. Once melted take a dessert spoon of the mixture and drizzle it over the cakes. Top with Dr Oetker chocolate hearts or Dr Oetker silver edible balls. Eat and enjoy! 





Cupcake icing


Top Tips To Making The Perfect Cupcakes
  • Use butter that has come up to room temperature or an alternative spread like Flora buttery for taste and ease of mixing.
  • Make sure you pour the mixed egg into the creamed butter and flour, a little at a time, as the mixture could curdle if you add it all at once.
  • To help the mixture rise and avoid lumps, I recommend sieving the cocoa powder and the flour before adding to the cake mix.
  • If the mixture does curdle add a couple of tablespoons of flour from the pre-weighed floured and mix in well. 
  • To check if the cakes are baked properly touch the top lightly, if it springs back and doesn't leave a dent in the top then they are cooked.

Easy Christmas Tree Cakes

These gorgeous little cakes are great to make with children. Decorate with shapes cut out of ready rolled icing, such as Christmas trees, stars and snowmen. Easy to adapt for all occasions.

Ingredients


225g self-raising flour 
225g caster sugar 
215g unsalted butter 
1 tablespoon veg oil 
4 eggs 
1 tsp good vanilla extract 
1 tsp baking powder

Heat Oven to 190c.
Put everything in the bowl and mix (I use electric hand mixer) until fluffy.
Fill cases about 1/4 full.



Bake for 20 minutes until risen and the mixture springs back when touched.
Leave to cool.
Top with buttercream and decorate how you wish.

Makes 24 cupcakes
